C is for Cookie (that’s good enough for me)

I’m a cookie fanatic. I’ve always had a sweet tooth, but lately I am all about the chocolate chip cookie. And if peanut butter is added, that just makes me even more a fan. Yesterday, I decided to try a new recipe….

PBOatmeal Cookies

Lately, I’ve been eating an increasingly plant-based diet. I’ve tried several vegan cookie recipes, and to be quite honest, most were sub-par. However, when I made a modified version of Isa Chandra Moskowitz’s peanut butter oatmeal cookie (from her cookbook, Vegan with a Vengeance); I was more than pleasantly surprised.


Here’s the downlow on the best cookie I’ve had recently.


Preheat the oven to 350 degrees.


In a bowl, combine:

2 c. flour

2 c. oatmeal

2 tsp. baking powder


In a mixer, thoroughly beat:

3/4 c. canola oil (scant)

3/4 c. peanut butter

3/4 c. raw sugar

1 c. brown sugar

1/2 c. almond milk

2 tsp. vanilla

1/2 bag of chocolate chips


Mix the dry ingredients together, then incorporate into the wet mixture. Use a small ice cream scoop (mine is about 2 Tb.), to portion out the cookie dough onto parchment paper-lined cookie sheets. Smoosh (yes, that is the exact word for it) the dough to flatten them a bit. Bake in the oven for about 15 minutes until golden brown.




These cookies were a hit. My husband kept asking, “Are these really vegan?” He also claims they are the best cookies EVER. I don’t really disagree. I’m really excited to try more recipes from the Vegan with a Vengeance cookbook–maybe you should check it out, too! 🙂
